Purity is a beautiful “unprocessed oolong” that is close enough to a white tea to be in that category, but really doesn’t fit into any of the Seven Genres of tea. It is also similar to White Cloud, which comes from Fujian, but Purity is from Taiwan. A dear friend had an ecological forest garden in Pinglin where the trees were scattered around a forest, most of them wild. For many years, he didn’t know what to do with the tea. He said it didn’t really “want” to be an oolong. It made decent red tea, but wasn’t inspiring in that way either. One year, he let some sun dry slowly, oxidizing and drying like a white tea like Shou Mei. He doesn’t call it “white tea,” instead referring to it as “unprocessed tea.” Purity is very unique. It has a special chocolatey sweetness that is unbelievable. The liquor is clear and bright and cleanses the palate, the body and the spirit. Purity is the most forgiving tea we have ever encountered: it is almost impossible to misbrew. You can brew it leaves in bowl, steep it, boil it or even leave it over night. It also makes excellent sun-brewed cold tea. It is also incredibly patient, and can be steeped countless times, lasting for days. We recommend starting with leaves in a bowl.
