He says that he thinks his tea is a synthesis of modern and traditional since tea lovers and producers nowadays have a background in scientific research that traditional farmers didn’t, and therefore understand the chemistry and soil in ways that are very modern. The higher oxidation and roast bring out a nutty, apricot flavor that is divine. To this day, the main varietal in Taiwan is Qing Shin (“Gentle Heart”), which was once a Wuyi varietal that has since been lost in Wuyi itself, surviving only in Taiwan. There was another Wuyi varietal that was very common throughout the north of Taiwan because it was hearty and grew well. These days it is just called “Wuyi Varietal.” There is a version (or perhaps versions) of this varietal around today, but farmers stopped using it on a large scale because it was too bitter when processed. As the market began to grow in the late 70s and early 80s, and quality improved, this varietal was slowly replaced and some versions of it vanished. Having more than one varietal with the same name is common, though confusing. Sometimes this confusion is resolved with numbering. The version(s) in existence now aren’t the same as this one, and they aren’t processed the same nor grown in the same location(s). The same is true for using coals instead of electric heat for tea preparation—you cannot just set the temperature and relax. You have to first master the skill of selecting the right charcoal that won’t smoke, and then practice for years to master using the ash to control the temperature to the precise degree desired. Even then, the formula taught to you or refined from decades of experience won’t be applicable to \u003cem\u003ethis\u003c\/em\u003e tea and \u003cem\u003ethis\u003c\/em\u003e charcoal. You will have to monitor it carefully, which means you will also have to be very sensitive to the chemical changes in the tea and the corresponding appearance and aromas, examining and smelling the tea at regular intervals to know when to adjust the coals\/ash and when the tea is roasted to the desired degree. \u003c\/p\u003e\n\u003cp\u003eHeavenly Turn is uplifting, gentle and bright. It is flavorful, rich and opening. It nourishes the digestion and leaves you energized and satisfied. Jasmine Wind is a newer project that the co-op has developed. They infuse two separate flowers into an oolong tea by hand. Though we named this tea “Jasmine Wind,” it is actually infused first with wild gardenia flowers. The flowers are laid across the wet leaves in a tray for around an hour and then piled in layers in a basket while the tea is oxidizing. Then, after the tea is fired, rolled and partially dried, it is infused again at a later date with jasmine flowers. Some of the blossoms are then dried with the tea. The light fragrance of the jasmine and the heavier gardenia work well together. It is usually allowed to rest for around a year, letting the fragrance and roast mellow. This Jasmine Wind was produced in the late spring of 2022. A lot of Jasmine teas are overpowering, with a floral fragrance that is too strong and overpowers the tea. Jasmine Wind is much more balanced, healthy and feels great at this time of year. We recommend brewing it light, so try using a bit less than you do for other oolong teas.
