If you put ten grams of very cheap one-dollar tea and ten grams of very expensive, fine tea in the forest, it all decomposes into twenty grams of dirt—and the frogs, bugs, the trees and sun all don’t care which tea we value more or less. The quality in tea is not absolute. The data, information, history and brewing methods are all real and relevant to humans, but have little to do with the plant world tea inhabits. Drinking a very simple, humble tea together each year reminds us that we aren’t here for fancy flavors or great experiences; we are here to learn from Tea and from each other. We are here to share in this global experience together, inviting harmony into our lives and hearts, changing the world bowl by bowl… Elevation reminds us that Tea is Tea: a simple leaf from the forest, here to remind us of our connections to Nature, to ourselves and to each other.\u003c\/p\u003e\n\u003cp style=\"text-align: justify;\"\u003eElevation is also important environmentally. We hope that this community can walk the talk, that we can change the lives of humans who are behind positive change, as opposed to just talking about the problem. Mr. Su Shui Ding was our choice because he is an incredible example of integrity and love. On behalf of this whole community, we offered to buy up whatever remains of Mr. Su’s tea each year so that he would never have to worry about making ends meet again. We could never afford this alone, but on behalf of this community, we can get it done together. Most of the Assamica in Sun Moon Lake, Taiwan is processed with greater oxidation and rolling to be sweeter. We have asked Mr. Su to oxidize ours less, as we feel the sweeter flavor comes at the expense of the energy of these old trees, and we also want the tea to be simple, bitter and astringent—closer to the nature of the leaves on the tree. This is the quintessence of a “daily tea,” one that becomes a friend through thick and thin—you don’t have to sit up formally or act in any special way around such an old friend. Ruby Red is a cultivar born, grown and promoted mostly for its exceptional flavor. And when you drink it, you will see why. Repeating that it tastes like no other tea again and again still won’t prepare you for that first sip! Ruby Red tastes of cinnamon and wintergreen or mint, in some ratio, depending on who you ask and which Ruby Red they are drinking. He told us that they had formed a local cooperative much like the one that Mr. Xie has formed, training farmers to use organic methods and then helping to sell some of their tea cooperatively after they have received certification. Our guide proudly pronounced that more than three hundred farmers have joined the cooperative so far!\u003c\/p\u003e\n\u003cp style=\"text-align: justify;\"\u003eAnother unique thing about the farm where this tea was sourced is that all of the tea trees are seed-propagated, which is incredibly rare in this day and age. It is much easier for farmers to use cuttings, allowing for a uniformity that makes the farm easier to maintain and the leaves simpler to process. But as we have discussed in many issues of the magazine, something natural, essential and deep is lost when the trees are not allowed to reproduce in a natural way—cross-pollinating, which creates a more vibrant, natural expression of the tea’s energy. As we walked amongst the trees, it was easy to see the result of this seed-propagation, since each and every tree was different: some had mutated to have reddish leaves, and they all were unique in size and shape as well.\u003c\/p\u003e\n\u003cp style=\"text-align: justify;\"\u003eRed Sun Rising has now been aged a few more years, but the liquor of Red Sun Rising still brews deep and red like its namesake—just deeper than before. It is bold yet sweet, powerful like a dian hong, but with much less strength and power, and an added delicacy and refinement that bring grace to the table. Most red teas are best enjoyed in large cups or bowls, but this tea is to be sipped, much like an oolong. Some aboriginals claim that it was the “Tea of the Gods (Shen Cha),” drunk by their ancestors in ceremonies. These tea trees are actually the ancestors and heritage of the manmade varietal called “Ruby Red.” That tea, also known as “cultivar #18,” was bred using Shan Cha and Camellia sinensis var. assamica from Burma and\/or Yunnan.\u003c\/div\u003e\n\u003cdiv style=\"text-align: justify;\"\u003e\n\u003cbr\u003eShan Cha grows high up in central Taiwan, from 800 to 1800 meters. The oldest trees can grow above ten meters in height and live for centuries, if not thousands of years—we don’t know how long, as they have not reached their potential lifespan. Unfortunately, such wild, forest habitats are threatened, like many Nature reserves in the world. This tea is, of course, a splendid exception to this. The farmer preserves several hectares of wild forest, only picking the tea once a year and leaving weak trees alone if they show signs of stress. This living tea is completely wild, propagated by seed naturally without human intervention, and grown in chemical-free and completely untended, biodiverse wildness.\u003c\/div\u003e\n\u003cdiv style=\"text-align: justify;\"\u003e\n\u003cbr\u003eThis Shan Cha was made by Mr Wang (王證程), a wonderful ecological pioneer and great promoter of sustainable tea farming in Taiwan. It is processed like a red tea, similar to \u003ca href=\"https:\/\/globalteahut.org\/products\/elevation?variant=37664309772447\" target=\"_blank\" title=\"Elevation\"\u003eElevation\u003c\/a\u003e. It has a very different flavor and energy profile, however. Like Elevation, Shan Cha is uplifting and awakening, but it is darker and bolder, with stronger hints of raw, wild honey and a much more vibrant Qi. You may also taste subtle hints of the wintergreen flavors that are so prominent in Ruby Red, as this is its mother. Unlike oolong, intentionally aging red tea has yet to become popular again. We hope to change that. Aged red tea is wonderful! And it is far less location sensitive than puerh or black tea, which means that those of you in dry climates can age red tea perfectly. Like oolong, it oxidizes, as opposed to puerh and black tea which oxidize and ferment as they age. Aged red teas are rich and bright, changing faster than oolong even. They are a treasure worthy of our space!\u003c\/p\u003e\n\u003cp style=\"text-align: justify;\"\u003eAloft is an intentionally aged red tea of around twenty years. It was all bud sets, so the leaves are smaller than our Elevation, but it does come from a big-leaf varietal. At the time, before the large-leaf tea had gained such traction in the red tea market, Sun Moon Lake red tea was sorted like most red teas according to the amount of buds, or how “tippy” it was, in other words. This version is different from an earlier version of aged Sun Moon Lake tea we also called “Aloft,” which was from small-leaf trees. \u003c\/p\u003e\n\u003cp style=\"text-align: justify;\"\u003eAloft is thick and rich, dark and malty, with some sourness as well, which is not uncommon for an aged red tea. With some steeping skill, you can minimize the sourness and bring out more tart, berry flavors. The Qi is magnificent, rolling upwards in beautiful and peaceful waves. Tea is a very absorptive plant and will take on the fragrance and flavor of whatever is around it. Tea trees grown near camphor trees, for example, will taste like camphor. (This is also why it is so important to store our tea away from the kitchen and all its spices, fragrances, oils, etc.) There are two ways to infuse tea with the fragrance and flavor of any flower or herb—either you steam it in or infuse the wet leaves, or you age the tea with the herb\/flower. Most often, the herb or flower is added to warm wet leaves to infuse as this method is much quicker and allows the tea to take on the flavor of the herb\/flower during production, which means it can be sold immediately. Aging the tea with the herb is more subtle, deeper and more powerful. Depending on the herb\/flower, this process takes three to six months minimum for the tea to take on the fragrance, flavor and energetic properties of the herb\/flower. We chose this aging method way back when and allowed the tea to age in our Center for several months, letting the flavors of the organic ginger warm and spice the honey-fragrance tea. It is called “Hong Yun (紅韻 in Chinese)\". Gongfu red tea is not named after the brewing method used to prepare it. The reason such red tea is called “gongfu red tea” is because it is produced from high-grade tea and with much more attention to production and skill. Traditionally, most places where gongfu red tea is made would reserve the buds for green tea and the lower grades (second flushes, larger leaves, etc.) for red tea. Gongfu red tea, on the other hand, is made of first flush bud sets and therefore represents the highest-grade, most valuable tea the farm produces.\u003cbr\u003e \u003cbr\u003eHong Yun is made from a cultivar called Taiwan 21, which was developed near Sun Moon Lake at the Tea Research and Extension Station. Hong Yun is a cultivar, which is a manmade varietal, and is a more recent development. It is a cross of delicate varietals of Qimen small-leaf teas from Anhui with Indian varietals that are more hearty and robust. It was produced to create a more aromatic and pungent tea that could be processed into finer, higher quality red tea. All of this means that it requires also a bit more skill and patience to entice the best out of the leaves. Hong Yun flushes within a week’s time, which is longer than most varietals in Taiwan, which makes it labor-intensive to harvest and produce, especially since it must be picked by hand and a more careful selection of bud sets must be made. Its delicacy and higher cost of harvest also means that it must be processed with much more care than most other red teas in central Taiwan. For that reason, few farmers are willing to cultivate Hong Yun despite its wonderful flavor and aroma, since it is more costly to do so and must be sold at higher prices. Hong Yun is very sweet and responds to gongfu brewing. It tastes of Asian pears with hints of citrus and sometimes peaches when you brew it just right. It is rich and delicious. After withering for a certain period, the tea leaves are rolled, oxidized and finally dried by burning pine wood. For the sake of the health of the drinkers, the wood used for burning is of high-quality and the dryness is controlled so that the tea leaves are not intentionally heavily smoked.
