Green tea is meant to be unoxidized, capturing the fresh, Yang energy of the newly-sprouted bud in its nascent form. This results in a delicate, fragrant brew with the bright energy of Nature. Traditionally, the best green teas were also only harvested in the spring, which meant that the bud itself was the tree’s fresh shoot at the time when the world was also becoming green. The vibrancy of the Yang bud at the time when the world is Yang was considered to be a delicacy, a medicine for connecting to Nature and the seasons and itself a herald of the change in weather.\u003c\/span\u003e\u003c\/div\u003e\n\u003cdiv style=\"text-align: justify;\"\u003e\u003cspan\u003eCloud Temple has to be withered, as it is made up of leaf-bud sets. This means that it is not really green tea in the strictest sense. These leaves are the first of spring, and therefore do contain Nature’s essential awakening from the winter, as well as the tree’s first and strongest buds, but the larger leaves in the set have also matured a bit and moved more to Yin. Since the larger leaves are full of moisture, they have to be withered as they are too brittle to work with. This light oxidation means that this tea is semi-oxidized and therefore has one foot in green tea and one in oolong. It is also rolled, which is not a step in traditional green tea production. The rolling breaks the cells down and brings the juices to the surface. This means that Cloud Temple will be far less delicate than an ordinary green tea, with a more robust, deeper liquor that has more breadth and a greater balance of Yin and Yang. However, on the scale of all teas in general, Cloud Temple is still very soft and delicate—even though it is a bolder green tea. There is a lot to be said for this balance. It creates a pleasant drink and is great for the body as well.\u003c\/span\u003e\u003c\/div\u003e\n\u003cdiv style=\"text-align: justify;\"\u003e\u003cspan\u003eCloud Temple is a very powerful tea, but it is also very simple, especially if you brew it leaves in a bowl. Just a few leaves of this magical tea in a bowl are enough to wash the spirit clean and bring a sense of spring into your life, rising up like a breeze from under your arms. There is nothing flashy or extravagant about it. It boldly offers bitterness, sweetness and astringency, like Nature and life. Autumn Bridge is really an unbelievable deal, and great for drinking or further storage.\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003eThe storage is immaculate. It has had the same owner since 2001, who stored it very well. The tea is clean and beautiful. The leaves are larger, with some “huang pian” mixed in the blend, which means mature leaves. These thinner leaves, which were on the tree longer, age faster and have particular flavor. We think that some of the raw material is from old trees and that due to the more mature leaves the piling was less, meaning the tea had more room to age.\u003c\/span\u003e\u003cbr\u003e\u003cspan\u003eThis glorious tea tastes like autumn forests, earth and tree roots. It has beautiful, grounding energy and a wonderful calmness. Most of the Assamica in Sun Moon Lake, Taiwan is processed with greater oxidation and rolling to be sweeter. We have asked Mr. Su to oxidize ours less, as we feel the sweeter flavor comes at the expense of the energy of these old trees, and we also want the tea to be simple, bitter and astringent—closer to the nature of the leaves on the tree. This is the quintessence of a “daily tea,” one that becomes a friend through thick and thin—you don’t have to sit up formally or act in any special way around such an old friend. This tea is epic and has beautiful energy. It is great for drinking or aging and has a magical relationship to the full moon for some reason. If you don’t believe us try getting familiar with it and then drink it again on a full moon night. This tea was sourced by Master Tsai and Snow for us, who traveled to the region and watched to make sure the tea was picked from old trees and then carried back down the mountain for pressing. The tea was harvested from trees that are all two hundred or more years old. They are also all wild, seed-propagated, chemical-free and from rich biodiverse ecologies. Each cake was then stone-pressed by Snow’s friends in Kunming. Boundlessness is full and rich, uplifting with a stronger relationship to the sky due to the altitude. We find it sweet, with many floral notes, but with a depth and Qi that means it will also be a great candidate for aging.\u003cbr\u003e\u003cbr\u003eThe red version is amongst the best dian hong teas we have ever tried. Snow selected the best of all the cakes produced for us. Sometimes tea lovers add two other kinds of water as well, “shrimp eye” and “string of pearls”. The higher oxidation and roast bring out a nutty, apricot flavor that is divine. Usually, shou puerh doesn’t have any old-growth tea in it because tea from old trees is very expensive and the piling reduces the quality and essence of the tea, which is a shame. Using such tea would also mean that the sheng and shou versions would have to be sold for the same price, which is very challenging for a producer. Part of why Samadhi is able to contain old-growth tea and still remain affordable is that the leaves are larger, lower-down, thinner and bigger leaves, called “huang pian (黃片).” These were blended with other kinds of leaves, bringing a nice, balanced flavor. Huang pian are essentially the leaves left on the tree to grow.\u003c\/div\u003e\n\u003cdiv style=\"text-align: justify;\"\u003e\u003cspan\u003e\u003cbr\u003eSamadhi is also special because it was only ever owned by one merchant, whom we know and trust. But as we have discussed in many issues of the magazine, something natural, essential and deep is lost when the trees are not allowed to reproduce in a natural way—cross-pollinating, which creates a more vibrant, natural expression of the tea’s energy. These tea trees are actually the ancestors and heritage of the manmade varietal called “Ruby Red.” That tea, also known as “cultivar #18,” was bred using Shan Cha and Camellia sinensis var. assamica from Burma and\/or Yunnan.\u003c\/div\u003e\n\u003cdiv style=\"text-align: justify;\"\u003e\n\u003cbr\u003eShan Cha grows high up in central Taiwan, from 800 to 1800 meters.
