“Shibui” means the “simple,” “rustic” or “unadorned” and is a guiding spirit in the aesthetics of tea. This rare white tea is all of those things. It is made by Mr Wang (王證程)who is a shining light in the ecological gardening and sustainability movements in Taiwan. He also produces our Shan Cha. In fact, this white tea is made from the same wild trees. It is picked by hand and withered/dried in a traditional way using the sun over seven days, as opposed to oven-withered as much white tea is these days. This tea is delicate, sweet, rich and simple. The energy is soft and Yin, yet deep and droning with power. Shibui is the perfect leaves in a bowl tea. Many teas aren’t very patient when placed directly in the bowl, but this tea can last for many bowls. It is also glorious brewed in other ways as well. Beyond that, it is also a great candidate for aging.
